The sleek Park Avenue shop Borne Confections is now importing chocolates by Oriol Balaguer, a chef from Barcelona who worked with Ferran Adrià. Mr. Balaguer’s signature is a chocolate bonbon in the shape of a cacao pod, filled with often exotic ganache flavors.
Mascleta, the flavor that is the most popular one in Spain, delivers the slight buzz of pop rocks. Truffle is strictly for lovers of truffle oil. Fragrant rosas, scented with rose water, was more my style, as were rum and star anise. For Valentine’s Day there is a red box of six pieces, an array that can be varied to taste, that bears the swoon, “I loooove you.”
